Regarding the clutch adjustment; in my experience it's a bit of a "black art" on Ironheads, and even when set up to OEM spec with new parts, requires a bit of tweaking to get it dead right.
Try adjusting the free play on the cable, a bit at a time, with the engine and tranny hot. There's a very fine line on these 'twixt slip and drag.
