It depends if you are travelling solo or 2 up and how much you plan on taking.
I never have a pillion so I find one or two large waterproof roll top sacks (canoe bag type things) sat on the pillion seat and strapped to my sissy bar is good enough.
If you're taking a passenger then you'll probably need saddlebags and a sissy bar with rack etc.

Low sissy bar and luggage rack, both from Harley's P&A catalogue, stupidly expensive! I have a couple of sissy bar mounting bags, one large one small
The most important change for me (and Mrs R) was a comfortable seat. We found the stock one with the booster cushion good for no more than 50 miles.

Shame, I sold the detachable one I had on my 2015 lowrider about 6 months ago.
There's usually things like that on Ebay. Any sissy bar for a 2007 on Dyna Lowrider, Street bob or Super glide will fit.
Avoid any meant for the Dyna Fat bob or wide glides as they are wider.
If you are going for a detachable bar you will also need to purchase 2 different kits for the mounting hardware (assuming this wasn't installed by the previous owner) - one has the bobbins & bracket that the bar mounts to and the other relocates the indicators if I recall.

Check out other makes too, rather than just the vastly overpriced MoCo stuff. I've got a Fehling sissy bar/rack and it was little more than just the side plates for an HD setup.
